Biscayne Lady Yacht Charters features Chef Clifton Smith, a graduate of Johnson and Wales' Culinary School. Johnson and Wales University is a prestigious culinary arts school whose alumnus includes Emeril Lagasse, Tyler Florence and Michelle Bernstein.
Chef Clifton brings his education to our catering department but his vast experience also helps define his deep culinary career. He was born and raised in Jamaica and worked for many top resorts in that country including the Jamaican Pegasus. There he was provided a multi-cultural learning experience and had the opportunity to cook for many high profile people including President Clinton, Pope John Paul II, the Queen of England, Fidel Castro and the Prime Minister of Jamaica.
His culinary experience grew by the constant mix of cultures. Chef Clifton would be at the center of a constant influx of food festivals. Each festival would bring a different flavor from another part of the world and each festival would add another flavor to his repertoire including Caribbean, Cuban, Italian, French, American and many more.
All these flavors and styles create a great opportunity to accommodate all our potential clients. Chef Clifton is able to draw upon his education and experience in order to help create your ideal flavor.

Charter Coordinator Jeanne Juan explains, “He deals well with pressure. He doesn't get rattle and crazy when he has two charters. When he had three charters a day and he was still in control of himself. He was so cool through the whole thing. I never heard him complain once. He is never nasty. He never looses it. He will discuss things with you and explain how certain ideas could work or not work. If it was not for him doing that with us, we couldn't do our jobs as good.”
Through it all, Chef Clifton specializes in creating menus for large groups which is ideal for that 150 passenger corporate holiday party or that once-in-a-lifetime 400 passenger wedding. But he creates this menu as if you were walking into a restaurant and ordering the food ala cart. Even if a surprise event or charter arises he will work with what he has and create a very unique and flavorful menu.
